Organic Banana Nut Muffins
Ingredients
3 organic bananas, smashed
1/3 cup melted organic coconut oil
3/4 cup organic brown sugar (Woodstock Farms)
1 pasture-raised egg, beaten (Baldwin Brook Farm)
1 teaspoon baking soda
Pinch of Sea salt
1 cup crushed walnuts
1 1/2 cups of organic whole wheat pastry flour (Bob's Red Mill Stone-Ground)
Directions
1.Preheat the oven to 350°F (175°C).
2.With a wooden spoon, mix coconut oil into the mashed bananas in a large mixing bowl.
3.Mix in the sugar, egg, and sprinkle the baking soda & salt over the mixture. Mix together.
4.Add the flour last, mix gently.
5.Pour mixture into greased or paper lined muffin tin.
6.Bake for 35 to 45 minutes.
7.Cool before serving. Enjoy!
