Traditional Chicken Soup

Traditional Chicken Soup

1 Organic Whole Chicken

2 Organic Bay Leaves

1 lb Organic Carrots, chopped into 1" pieces

2 Stalks of Organic Celery, chopped

1 Organic Onion, chopped

1 head of Organic Garlic, finely diced

10 cups of filtered water

2 Tablespoons Organic Coconut Oil

2 Tablespoons Organic Apple Cider Vinegar

Fresh Herbs of your choice (parsley, rosemary, thyme)

Season generously with:
Celtic Sea Salt and Organic Black Pepper

Optional:

1 Package Cooked Organic Rotini, or
10oz (pre-soaked) and cooked Organic Wild Rice

Directions:

1. Heat a large soup pot on medium-high,  add coconut oil.
2. Sweat the diced garlic and onion, on low, until onions are translucent.
3. Add the whole chicken, bay leaves, celery, carrots, vinegar, water and seasonings.
4. Bring to a boil. Cover, lower heat and let simmer for about 2 hours or until the chicken is falling apart.
5. Remove entire chicken from broth, along with the bay leaves (put the leaves into your compost pile).
6. Carve the chicken, dice chicken meat into 1/2" cubes, add back into broth.
7. Serve broth, vegetables and chicken over cooked rice or noodles. Garnish with fresh herbs.
