Organic Flourless Chocolate Cupcakes

Organic Flourless Chocolate Cupcakes
Who needs flour when you've got chocolate!
 
1 1/2 cups (10 1/2 oz) organic (70% cacao) chocolate chips

1 cup (2 sticks) organic butter

4 organic or pasture raised eggs

4 organic egg yolks

1/2 cup organic raw sugar

2 tbsp. organic cocoa powder or Dutch cacao powder, sifted (I use a Polish brand Kakao)

1 tsp organic vanilla extract

1/2 tsp Sea salt

Directions

1. Preheat the oven to 375˚F.
2. Place 12 paper baking cups in a muffin pan.
2. Put the chocolate and butter in a double boiler, or medium bowl over a pan of simmering water, and stir until completely melted. Set aside to cool.
3. In large bowl, cream the eggs and sugar with an electric mixer until pale and thick.
4. Gently fold in the melted chocolate and remaining ingredients.
5. Spoon the batter into the cups.
5. Bake for 20 minutes. Remove pan from the oven and cool for 5 minutes.
6. Remove the cupcakes and cool on a rack.
7. Cut a heart shape out of paper. Use both the die-cut and the stencil shape to cover the cupcakes and sift the powdered sugar over top to make your heart topping.
